It’s Pancake Tuesday …the one day of the year when it’s perfectly acceptable to have syrup-drenched pancakes for breakfast, lunch and dinner!
We here at SoSueMe are HUGE pancake fans so we decided to share a long time favourite pancake recipe!
French Toast Pancakes
If you like French toast, then you HAVE to make this recipe! It’s seriously yum!
This particular recipe is a classic! From the below mix, you should be able to make around 8/10 pancakes.
- 1 cup of flour
- 2 tablespoons of sugar
- 1 teaspoon of cinnamon
- 1 teaspoon of baking powder
- ½ teaspoon of baking soda
- ¼ teaspoon of salt
- 1 cup of buttermilk
- 2 tablespoons of vegetable oil
- 1 egg, whisked
- 1 teaspoon of vanilla extract
- 2 eggs
- ½ cup milk
- ¼ teaspoon cinnamon
Take one bowl for mixing the dry ingredients, and 1 for whisking the liquid ingredients. Using the first bowl, mix the flour, sugar, cinnamon, baking powder, baking soda, and salt. In the second, mix the buttermilk, egg, oil, and vanilla.
Now, combine the two mixes together and stir.
Pour ¼ cup of the batter into the pan and cook until the pancake mix starts to go brown.
Once the pancakes have been made, set them aside and get started on the French toast mix.
Next, whisk together the eggs, milk, and cinnamon.
Take one of the pancakes and dip it into the French toast mix, letting it soak before placing it in the pan and cooking!
It’s as simple as that!
Now all you have to do is add syrup and toppings such as fruit, nuts, etc!
