We’re really missing the sunshine here at SoSueMe HQ so today we decided to relive the hot weather by making some guilt-free ice cream!
This treat is a gorgeous God send if you have a ridiculous sweet tooth but don’t want to indulge in yet another 99 ice cream cone!
It’s so easy to make, (literally 5 minutes) and it tastes divine!
Don’t be afraid to experiment with the ingredients so you can create a flavour to suit your own specific taste. For instance, if you don’t like almond butter, then use peanut butter. If you don’t like chocolate, then don’t use caocao.
The great thing about this treat is that it is so versatile and can be adjusted accordingly.
Ingredients
2 frozen chopped bananas (Tip: peel and chop the banana before you freeze them – trying to remove frozen banana peel is a disaster)
Half a cup of of unsweetened almond milk
1 tablespoon of cacao powder
1-2 tablespoons of Almond Butter (we used almond-vanilla butter)
1 teaspoon of vanilla essence (or you can use the extracted seeds from a vanilla bean)
Optional: crushed walnuts, almond flakes, pistachio nuts and dark chocolate drops
We used a Nutribullet for this but a good food processor will also work.
You can either blend the lot together at once (this is what we did – patience is not a strong point of ours!) or, you can first blend the frozen bananas with the almond milk and then add the vanilla, cacao powder, and almond butter.
Blend for 30-60 seconds and then check the mixture for unblended chunks.
Ideally the texture should be smooth and thick, like ice cream!
Once finished, pour into a bowl or mason jar and decorate with nuts.
We used crushed walnuts, almond flakes, pistachio nuts and some dark chocolate drops (our clean eating routine has waned a bit, so we also added some chocolate sauce!)
